Frozen Golden Pompano
Frozen Golden Pompano
Ocean-caught and flash-frozen within hours of landing, this flat, golden-skinned fish is a favourite across Asian and Mediterranean kitchens alike. Its fine-grained white meat is mild, sweet and remarkably forgiving, making it a reliable centrepiece for everything from a quick weeknight dinner to a weekend feast.
Why you'll love it
- Flash-frozen at sea to hold the natural sweetness and firm texture
- Clean, fine-grained white flesh with very few small bones
- Stunning golden-yellow skin that crisps beautifully in the pan
- Holds its shape under high heat without falling apart
- Sold whole and ready to cook, straight from the freezer
Cooking ideas
Thaw slowly in the refrigerator overnight. Score the skin lightly and pan-sear until golden and crisp on both sides, or steam the whole fish with ginger, spring onion and a splash of soy. It also deep-fries to a shattering crunch or bakes beautifully with herbs and lemon.
Storage
Keep frozen at or below -18 degrees Celsius. Thaw in the refrigerator and cook within 24 hours. Do not refreeze once fully thawed.
